Tuna Tartar

Ingredients:
• 150 gms raw tuna • 1 tbsp chopped onions 1 tbsp chopped parsley • 1 tbsp chopped capers • 1 tbsp chopped pickles • 2 tbsp olive oil • 1 tsp chopped rose ginger • salt • pepper • 1 lemon tile • 30 gms mesclun • 1 tbsp balsamic reduced • 4 pcs grapefruit wedges • 4 pcs orange wedges • 1 pinch of chili filament • 3 pcs small red peppers • caper flowers • passion fruit dressings
Production:
Step 1: Cut the tuna into small cubes and keep cool
The Marinade:
Step 2: In a bowl, combine chopped onions, chopped parsley, chopped capers, pickles, pink ginger and a dash of lemon juice.
Step 3: Add the chopped tuna to the marinade, the olive oil, salt and pepper. Stir to incorporate the flavors of each ingredient to the tuna.
On the plate
Step 4: Place the preparation in a cookie cutter. Garnish with citrus wedges, passion fruit vinaigrette, caper flowers and some black balsamic cream.
Finally, on top put a bouquet of mesclun, filament of pepper and lemon tile for more acidity according to tastes.
